Tagliatelle with Fine White Truffle

Ingredients for 4 people

  • 400g of fresh tagliatelle
  • 80g of butter
  • 40g of Parmesan cheese
  • 50g of Precious White Truffle

Throw the tagliatelle in a pot with boiling salted water .

In the meantime, melt the butter in a large pan over low heat. Over it grate the Fine White Truffle (to aromatize the butter just use the outer part, the less valuable) and half of the parmesan available. Mix it all over a very low heat until the desired creaminess is obtained (it must remain quite liquid).

Cook the tagliatelle al dente and pour them into the pan, add the remaining parmesan and leave the mixture to flavour for a few minutes, stirring occasionally with a wooden spoon.

When all is mixed serve the dish and end it slicing finely the White Truffle over.
